Directions:

1. Preheat oven to 180C

2. Mix 1/2 cup brown sugar, 1/2 cup white sugar, 1 egg, 1/2 tsp vanilla essence

3. Cream in 125g room temperature butter

4. Mix in 1 3/4 cup self raising flour and about 1/4 tsp salt until completely incorporated

5. Stir in 3/4 cup of chopped chocolate chunks (I like to use Whittaker’s creamy milk choc, and sometimes use half milk choc and half white choc. yum)

6. Using a spoon as a size guide, scoop cookie dough and shape into medallions about 1cm thick and evenly space out onto a cookie sheet lined with baking paper

7. Bake for about 10 mins, depending on your oven strength or until slightly golden brown

Makes about 20
Best thing about these are that they’re still extremely soft after they’ve cooled down

Banana Cupcakes

Ingredients:

2 ripe bananas (roughly chopped)
100g butter
3 eggs
1/2 tsp vanilla essence
1 cup self-raising flour
1 cup sugar

Directions:

1. Preheat oven to 180C

2. Heat bananas over low heat until soft, then add butter. Melt and stir well.

3. In a separate bowl, mix the eggs and vanilla with an electric beater and then add the banana mixture

4. Fold in the flour and sugar to complete the final mixture

5. Fill a 12-hole muffin tray with the final mixture to about 3/4 full for each hole

6. Bake for 12-15 mins, depending on your oven strength (all ovens vary) or until golden brown
